For Rene, who prefers to go simply by his first name, pizza-making began as a hobby, often turning the kitchen into friendly competitions with his wife before the finished pies made their way to family gatherings or relaxed Friday nights. Drawing from several years spent in New York, Rene favours East Coast-style pizzas with sturdy slices that support generous layers of cheese and tomato while allowing the dough itself to remain just as important.

That same restraint carries into the menu, where a concise selection of pizzas allows the dough and toppings to take centre stage rather than competing for attention. Those unable to settle on a single flavour can have a pie split in half, pairing options such as the Pepperoni and the Vodka Pie. Sharing the same mozzarella base, the two gradually reveal their distinct personalities through crisp beef pepperoni on one side and the mellow warmth of the housemade vodka sauce on the other. Among the vegetarian options, the Zucca & Fungi offers a lighter counterpart, pairing roasted mushrooms and tender zucchini with a generous finish of grated Grana Padano.

One of the clearest expressions of Troppo’s approach is the Nduja & Mascarpone. While the combination has long been a favourite abroad, it remains relatively uncommon in Jakarta, allowing the quality of each ingredient to stand on its own. Resting on a mozzarella base, the Calabrian spreadable pork sausage is cooked only briefly in the oven so it retains its richness and gentle spice. Mascarpone softens the heat, while fresh basil finishes each slice with a bright herbaceous note.

While the pizzas themselves remain intentionally restrained, diners can tailor each slice at the kitchen counter through a collection of local and imported hot sauces. From the gradual warmth of habanero to brighter fruit-forward blends, the selection allows every pizza to remain true to its simple foundation while accommodating different tastes.

Ultimately, Troppo Pizza isn’t trying to reinvent pizza. In a city where new restaurants often compete through novelty, Troppo finds its identity in consistency instead. Every pizza reflects the same measured approach to dough, toppings, and technique, allowing the quality of the fundamentals to speak for itself. Perhaps that is why so many diners return.
